The wine that put Nichelini Family winemaker Aimée Sunseri on the map (and won her the International Woman Winemaker of the Year Award): Cab Rosé. The bright watermelon red hue of this 100% Cabernet Sauvignon Rosé was achieved using the saignée method, then slowly fermented in small stainless-steel barrels at ambient temperatures. These old-vine grapes are from a 42-year-old vineyard block and were hand-picked at the coldest point of the early morning (3am!). With aromas of rose petal, this crisp rosé has notes of watermelon, lemon and raspberry with lingering strawberry on the finish. Smooth and easy-drinking, it’s the perfect wine for hors d’oeuvres with friends or for a romantic picnic!
Rosés can be beautiful, and using Cabernet Sauvignon can result in unexpected layers of flavor. I think of Rosés as the opening act to many dinners. My goals are to make an elegant and surprisingly complex Rosé that can elevate any meal.
